This wine is more savory and delicate than fruity and in your face. It is a lovely, pale salmon colored wine with subtle smells of wild roses and berries, creekside in the woods. You can taste wet river rock minerality with delicate, just ripe strawberries, bitter orange and grapefruit citrus, savory black pepper, and herbal lemongrass, all wrapped in a soft mouthfeel and juicy finish.
Left on the lees and stirred for 7 months in stainless steel. 1/3 neutral French oak, 2/3 stainless steel barrels; first days of fermentation with indigenous yeasts; completed with Provencal Rose yeast: stirred daily and kept at low temperature (around 58 degrees F). No malolactic conversion allowed.
